Feta Fries & Garlic Confit

Such sweet little baby girls today, looking so precious, even though Addie’s hair was pretty wild. 😉

But actually, Addie had a rough night’s sleep last night, woke up in the middle of the night telling me her ear hurt, and then had a fever when she woke up this morning. So although she was sweet and happy, I made a super early call to the pediatrician’s office. And wouldn’t you know it, poor baby girl has an ear infection. She got her tubes put in her ears almost 1.5 years ago, but one of them has since fallen out, and so of course she got an infection in that ear.


So we got hash browns while we waited for the CVS pharmacy to open and to fill the prescription antibiotics, and little miss priss ate the whole thing.

After we finally got the antibiotics, I gave her the first dose, and then dropped her off at school, since she wasn’t contagious. And she still had a good day!


Emerson spent the day with Grandmommie, out at Grammy & Papa’s house. Emmie got to watch Grammy’s first round of PT with the home health nurse, and then set up herself for lunch to eat next to Grammy in her recovery recliner.

In our rush to get out the door on time this morning, I didn’t grab anything for my lunch. So I ran through the drive-thru at Pitaria and got a delicious gyro & Greek feta fries, and this was so fresh and hot and super delicious.

I usually do these reading wrap-ups on the last day of the month, or the first day of the next month, but I forgot until today. But I had a pretty good reading month in June! Last month, my favorite book of the month was actually an entire series (or compendium) of graphic novels I read called “Saga,” which is a sci-fi space opera situation, and I really really enjoyed it.

I also made our little one second every day video for July today too, which is super cute as usual.

 

 

After picking up the girls, and heading back home, I started working on dinner. I put hash browns and biscuits in the oven to bake, and then Emmie helped me peel to full heads of garlic, so I could try roasting it a new way, covered in oil, called “garlic confit.” She was such a good helper, and she kept talking about how good it smelled. I’ve got a little garlic girlie on my hands 🙂



We had breakfast for dinner, just me and the girls, while Jeff mowed the back yard. Our neighbor was generous enough to mow the front yard for us the other day, but the back yard still needed to be mowed, so he powered through and got it all done tonight.




We ordered Emmie a new backpack for first grade off of Amazon the other day, with a matching lunchbox, and it came in today. She immediately packed it up with the school supplies we’ve gotten so far (still need a few more things) and wore it around the house for most of the night, both before and after dinner.


We went over to sit by the back door to watch Jeff mow the back yard, and the girls dragged over pillows and blankets and got super cozy. They only stayed like this for like 5 seconds, before they were doing gymnastics and headstands and rolls and flips and all the things.



And look at how beautifully golden this roasted garlic turned out! I did it in this little dish, covered in olive oil, and covered in foil, for about two hours at 250 degrees. And it turned out sooo good. I let it cool down for a while, and then poured the whole thing into a jar to save. Supposedly, this can last for up to 2 weeks in the fridge, but I think we all know there’s no chance it’ll last more than a few days.



We waited until Jeff finished mowing (it’s super loud, even from inside the house), and then I rocked Addison, and Emerson just laid down on the couch. Addie very sweetly fell asleep with me after just a few minutes, and Emmie did as well. After I laid Addie down in her bed, I tried to pick up Emmie to carry her to her room, but she grabbed the blanket and tucked herself back in, so I just left her there for a bit longer, while I’ve been writing this post.


Tomorrow is my day to stay home with her again, and we’ve got another big, busy day planned together. So I better go get some rest so I can try to keep up with the boundless energy of a very cute six year old!
