Chicken & Rice

This morning we went to church as usual, had lunch, and then headed to Walmart for our grocery pickup order. Once at home Emerson had her last bottle of formula (we’ve been mixing formula & whole milk all weekend), and then she took a 2.5 hour nap. During that time, the boys helped me clean up the main living areas, plus their bedroom, and Jeff napped away his headache. Then I read my book for a while, and the boys played video games.

Then Jeff’s parents came over to have dinner with us. I made my MIL’s chicken & rice recipe, which is the easiest, and super delicious. If you’d like to know, here’s the recipe…

  • 2 cans cream of chicken with herbs
  • 2 cans milk
  • 2 cans instant white rice
  • 2 large cans canned chicken
  • 2 cups shredded cheddar cheese
  • S&P, garlic salt

Dump soup cans in large mixing bowl. Use empty cans to measure rice, then measure milk (it will clean the rice out of the cans a little), then add chicken, cheese & seasonings. Mix together, pour into casserole dish, cover with thin layer of more cheese. Bake at 350° for 45 minutes.

And it’s so good!! You can also add in broccoli, green beans, or carrots for veggies. We just had our green beans on the side.

And then we made our first bottle with just straight whole milk! And this Mommy rejoiced & raised the roof when Emmie drank the whole thing like it was no big deal. Goodbye formula! Hello milk! And if you don’t have a formula-fed baby, or it’s been a while… a 32oz Similac tub which lasts a week, costs $36. The 36oz Parents Choice tub is way cheaper, but still costs $19. In comparison, a gallon of whole milk costs less than $5! Not only that, but instead of having to send three pre-made bottles to school every day, now we get to just send empty bottles, and daycare provides the milk! Y’all. This is a big deal in our house this week. Praise be!

It was a good Sunday, and a good Sunday night supper with family.

And tomorrow my baby will be ONE YEAR OLD. This Mommy ain’t ready yall.
