On my lunch break, I ran home super duper fast to prep some chicken & Indian Butter Chicken marinade, to marinate for the afternoon, and I ate a sandwich before running back to work. Forgot to take any photos… Then we had cake this afternoon for my coworker who is moving to another Bureau, and then my little unit will have yet another vacancy. Lord help us all…

Then after work, I picked up Emmie ran home really fast to cook the Indian Butter Chicken, and then we ran right back to school!

Tonight was the annual Growing Room Travels Around the World, and we had a great night! Each room gets decorated like a specific country, and all the teachers and parents bring in foods pot-luck style, for each country. Emerson’s room was India, so that’s why I made the Indian Butter Chicken. (Mine is down there in the square tin pan on the left middle.) Served on top of that delicious rice in that giant silver pot back there, it was soooo good!

These are Emerson’s current teachers – Miss Jessica on the left, and Ms. Viola on the right. She’s doing so good in her new classroom, and loves her teachers a lot! The teachers also made little passports for each of the kids, that they get to take around and get stamped in each of the countries.

We had sooo much good food tonight actually. Butter chicken in India, enchiladas in Mexico, pulled pork in the USA, pierogi’s in Poland (my personal fave of the night), ziti in Italy, curry shrimp in Jamaica (another fave of mine), quiche in France, egg rolls in China, noodles in Japan, plantains in Cuba, meatballs in Sweden, and by the time we got to Ireland, I was too stuffed to eat the beef stew (but Jeff had some and he said it was good). You only eat a few small bites of each food, so you can try some of all of it, but I was so full by the end of the night! It was all so fun and so good!

I think Emerson’s personal favorite of the night was the gelato in Italy, but of course she also really loved the cheese noodles in America, and the white rice in Jamaica 🙂

I was very impressed with all the cool Chinese things they had in China. The school cook is actually Chinese, so she brought in actual, real Chinese stuff to display, and I thought it was so cool to see & touch real yuán, which I probably never would have gotten the chance to do!

We had so much fun, and so much good food! If you’re interested, here is the post from this event last year. And today marks two years since Pullen’s Cozy Corner website was created, and I posted my first “Back to Blogging” post. And now I’ve been blogging every single day for over a year and a half now!

Once we got home, it was already past Emmie’s bedtime, so we went right into jammies and books and prayers and hugs and lullabies. This tiny penguin used to sit on the dashboard of my car, but Emmie grabbed it the other day, and now declares it’s her penguin, so I guess I lost Pocket the Penguin to my baby girl! When I was taking these photos of her tonight, she was telling Pocket to smiles for the pictures.

Even though I’ve got some dirty dishes in the kitchen, I’m too tired to do them, so they can wait another day. I need to go kick my feet up and get some rest. Travelling around the world in 60 minutes is exhausting!
