Today was the first day of Mega Sports Camp at our church, and the girls were very excited about it! This is Addison’s first year attending, and we signed her up for art, with her bestie Nora. And Emerson is doing cheerleading again. (She just can’t do stunts or jumps unfortunately, due to her arm.
And check out these fancy Mega Sports Camp themed nails both girls have! I helped Emerson with most of hers, and then she did all of Addison’s. The polish only lasts a day or so without a top coat protecting it, but it’s fun while it lasts at least.



The soup from last night wasn’t quite as soupy today, since it needed more broth, but I just added a little water and it worked out fine. And it was so delicious still, especially with my favorite garlic pepper crispy onions added on top.


OK so late last night, at literally like 11pm, I remembered I had meant to make some pickled red onions to go with tonight’s dinner. So I went back to the kitchen and took care of that, and I also made some Asian marinated pickles I saw on TikTok. Then I left them both overnight and checked on them again when we got home today.

And then dinner was really good and easy tonight. I made salsa verde beef in the crockpot this morning (it’s just a big hunk of beef, plus sliced onion, seasonings and salsa verde), and pan-fried some little mini quesadillas with chips & guac and black beans on the side. And obviously I had allll the toppings and condiments with my mini quesadillas. Oh, and I made mine with the carb-balance tortillas, and everyone else’s with the regular ones.


And these were aĀ hugeĀ hit with the family! I made Emmie and Addie just one each to start with, but I had to go back and make Emerson a second one, because she wanted more. I also made Jeff another few, and he ended up having five of these little guys! I thought there was going to be an excess of meat leftover, but we actually used basically all of it, because unfortunately I had to pick out lots of gristle-y/fatty pieces, which we just do not like.

OK then after dinner, we were watching PB&J Otter like usual, and when it was time to turn it off for bedtime, Jeff randomly started up a best-of-the-best pickle taste-test video from the Food & Wine YouTube video, and that reminded me I needed to actually taste-test the Asian marinated pickles I made last night. And then Emerson decided she wanted to do a taste-test of whatever pickles I had in the fridge, so set up a little mini pickle flight, and they each had a nibble. Emmie turned out to like the bread & butter chips, and Addie liked the Asian ones! (And don’t worry about Pennie, even though it looks like Addie has her head/neck in a vise-grip, she was fine š¤£)

The girls were asleep pretty easily tonight, and now that I’ve finished writing this, I’m gonna force myself to go wash some dishes, becauseĀ both sides of my sink are full, and I won’t be able to cook dinnerĀ tomorrow night if I don’t clean up the mess I’ve already got…
