Summery Soup

I went to church early by myself today for worship team rehearsal, and then Jeff and the girls came later when it was time for church to start.

Apparently, Addie did this because the sun was in her eyes too much.

Jeff’s parents came to our church today, and they wanted to go out to lunch, so we took them to our new favorite place for Indian food, at Prime Time Addaa. This is now our third week in a row eating there, and our man knows all about us now! 😂


We ran into Five Below after lunch really quickly, and Emerson picked out a few things to spend some birthday money on. Then the girls and I dropped off Nana back at our church, because she’s actually going to volunteer at Mega Sports Camp this week, so she went back for training! We had quiet time at home, and the girls I started watching the 1994 version of Little Women (which I love), but that also accidentally turned into nap time for me on the couch. Jeff was outside working in the yard for most of that time, and the girls played together sweetly.

By the time I woke up, it was basically time to start working in the kitchen. For dinner tonight, I made this delicious summery chicken & rice soup, with corn & tomatoes, that I got from Hailee Catalano on TikTok. I actually got her cookbook for Christmas, and although this recipe isn’t in the book, I wanted to get it out for the bright colors and the vibes. My sweet little 9-year-old sous chef was a good helper, learning to use a real knife (not just the kids one we’ve had for a few years now), chopping and stirring and doing all sorts of things. I did substitute fresh grilled corn for a bag of frozen fire-roasted corn, and that worked out just fine.

This was super easy, and came out super delicious.





Emerson spent some time with her little nail art markers again tonight, creating a different look for each nail, all going along with the Mega Sports camp theme. I helped her with some of the trickier things, and did mostly all of her left hand for her. Then Emmie did all of Addie’s nails as well, all basically the same as hers. I didn’t get a finished photo, so I’ll have to get that in the morning.

I spent some time cleaning up the kitchen before the girls’ bedtime, and got all the leftovers put away. I also went ahead and diced up all the green onions and the limes, since it would be easiest this way when re-heating the leftovers and such. And obviously I’m already looking forward to eating this for work lunch for a few days. I also put a few of the roots in some water in a glass jar, and I’ll re-grown them in my kitchen window sill.


Although I did clean-up earlier, I didn’t actually wash any dishes. The giant Dutch oven needed to soak first, so I just left all the dishes to deal with later, so I guess that “later” is now, and I gotta get that finished up before my bedtime tonight.
