Veggie Curry

I love these big smiles first thing on a Monday morning!

And it looks like they had a good drop-off together 🙂

Met up with one of my work friends at the food truck parked at our building for lunch today, and we ate together in the downstairs break room. I got the loaded Philly cheese steak, with peppers & onions (but no mushrooms), and it was very cheesy and very good.

My brother-in-law Bo and I are constantly on the hunt for a cheese steak that stands up to our memory of our love for the old school Philly Connection we used to have in town. This was really good, but it still wasn’t that. Who else remembers Philly Connection over on Tharpe Street back in the day? I ate there probably once a week during the one semester I attended college at TCC. I would drive over between classes, get a sandwich and eat and read in my car, before going back to campus. Anyways, I’ve rambled on for long enough about a dang sandwich, but it lives in my memory rent free, and I’m always chasing that high again! 😂

While watching some of our favorite YouTube vloggers last night, I finished up this super cute little puppy puzzle. I texted some pics to my Mama, and she gave me a few tips when I felt stuck. And then I made Jeff help me a little as I got to the curtains, which I had saved for last, and it was just a little tricky…

For dinner tonight, I made a Thai coconut yellow curry, with just veggies only, and no meat for a meatless Monday supper situation. I didn’t actually use all the veggies in the pic below, but about half the carrots, one red bell pepper, and one onion, plus the chick peas, which are one of my favorite things. During cooker and dinner, Jeff was outside mowing the backyard, so he didn’t eat with us, but the girls and I absolutely loved this. I’ve made it before, but it had been a while. I was also able to get the girls to eat the veggies too, which is a huge win. And they both really loved the chick peas too.

But dinner did take twice as long as usual, because I didn’t realize I had forgotten to turn on the rice cooker, until I totally finished the curry and went to start serving… I opened the lid and realized it was totally uncooked! So I clicked “cook” and then just went to sit down on the couch to wait it out. I said out loud that I was mad at myself for messing that up, and the girls were SO sweet to quickly say, “We’re not mad Mama, it’s ok!” And then Addie came over and propped up next to me like this, with her little journal she loves to scribble in, and hung out with me while we waited on the rice to finally finish up.

I also made a TON of rice, because I knew I’d have a ton of the sauce and veggies, and wanted plenty for leftovers to take to work for lunch for a few days.



The girls hopped in the bath to get cleaned up quickly after our late dinner, and then we watched the new Taylor Swift YouTube that surprise dropped at 7pm tonight, from her career retrospective with the Grammy’s. Then we got started on their bedtime, and things went smooth and easy. I’m now watching the brand new Taylor Swift Icon Sessions with the CEO of the Grammy’s, that was also released tonight, which has been a really good interview. But I also gotta get some dishes washed. So I think I’ll pop in my ear buds and set my phone up above the sink to finish the video while I’m washing the dishes…
