Sinkhole Exploring

So let’s start with a quick recap of last night… Jeff ended up doing some late night work, so I stayed up late watching Survivor. For some reason, I didn’t get tired, and I didn’t go to bed until 12:15am! And then Emerson woke up at 12:30… And then we realized the was super loud music in the neighborhood, so I was calling the TPD non-emergency line at 1am filing a noise complaint… And then Addison was awake by 1:10am… And so then all four of us were hanging out in the living room until about 1:30am, when we finally got both girls back to sleep. So that was a strange night!

But this morning, I was able to get up and make pancakes for all of us for breakfast. We had no eggs or bacon or sausage, but we had plenty of PB&J pancakes!

I went out to get gas in my car and pick up a huge grocery order, and then headed back home for our quarantine.

Then I made this Green Goddess Salad recipe I saw on TikTok, and it seemed like it took absolutely forever. I got so tired of chopping cabbage, that eventually I had the bright idea to finish the chopping in the Ninja, and then made the Green dressing in the Ninja as well. It turned out really good, but it just made sooo much!

The “salad” is eaten with these blue corn tortilla chips, kinda like a dip, and it goes really well together.

Emmie was doing all sorts of exploring around the yard again today, wearing her jammies and her fairy wings.

She told me these were her experiments (old bubble tubes stuffed with treasures from the yard) that she needed to leave for another week, or at least until Monday, and then check on them again.

After lunch at home, we got both girls down for a nice long nap at the same time. Hallelujah! That meant I got to just lay down on the couch with my iced coffee and Survivor, and rest for a while, all by myself. (Alone time by yourself if priceless when quarantined.)

This little baby woke up way before her sister did, so we had a few quiet moments with just us two (while Jeff was working on the computer), and this sock she was obsessed with 🙂

Emerson napped for a little over two hours, which she rarely does anymore, but clearly it was very much needed. Once she finally woke up, and we all got ourselves ready, we loaded up and went on an adventure! When we got there, this baby had fallen back asleep…

But we absolutely loved exploring the Lake Jackson sinkhole! It was gray and windy and a little chilly, but it was really incredible, and one of the coolest things I’ve seen in real life. We were actually the only people there the entire time we were there (about an hour), and only finally saw people walking towards it on our way back to the car.

 

You can’t really tell, but Addison actually LOVED riding around in that baby carrier, and was just super content and happy. (She sucked on the side of it most of the time, so that’s why she has that big wet spot on the side.)

Emerson’s favorite part of the whole deal were these lily pads. We went back to this particular little hole about three times.

She was collecting her treasures along the way.

Emmie went back in her fort when we got home (she won’t let us take it down), while Addie slept in her car seat, I washed up some dishes, and Jeff picked up some curbside take-out for dinner.

If y’all with littles are anything like us, you’ve been watching “Encanto” on Disney+ all week long. It’s a great little movie, and we’re loving the songs. And since the movie is set in Columbia, we ordered food from one of our favorite local places, that happens to be a Columbian restaurant, El Rincon Latino.

One of my favorite lines from the opening song (that I can’t stop repeating at any random moment), is “She’ll make ya feel better with just one arepa.” So of course we had to get an arepa. We got the shredded beef one (bottom right), and it was sooo good. Jeff and I shared all of this (Emmie wanted a PB&J but stole most of that fried cheese stick), and I was stuffed afterwards.

Aunt Suzanne and Uncle Keith made a surprise, sneaky carport delivery for Emerson, to give her some activities to keep her busy over these next few days. She was so excited to find it, and we can’t wait to bust it open tomorrow!

The girls both had (separate) baths tonight, and then we got them both in their jammies. Jeff held Addison and they both fell asleep, while Emmie watched Matilda and I took a shower myself.

Today’s quarantine day really wasn’t bad at all, it was quite good! I’m super tired though, so hopefully I can get a better night’s sleep tonight than last night. Jeff is actually already in bed, and I think I’ll follow behind him very soon…
