Salad Eggs

Sheppy was hanging out with the Christmas teddy bear, and this cute new Christmas pillow from my sweet MIL. Emmie was just as excited as always to find him before school! And she was especially excited to start the Advent calendar today too. We hung it up on Saturday when we did the tree, and she’d been dying to do it for the last few days.

She wore a shirt today that actually used to be a dress, but is obviously wayyy too short now, but not officially too “small.” So now it works as a cute little top instead! And look at this crazy hair!

She decorated her own individual stocking today, and as a class they decorated a cute little Christmas tree.

Well last night I made homemade lemon chicken orzo soup, and tonight I heated up a frozen skillet meal… which wasn’t even good. We kinda picked our way through it, but didn’t really enjoy it. I barely ate any of it, and I ended up making a PB&J like Emerson had.

 

After dinner, Jeff and Emerson ran to CVS for a few things, and I stayed back at the house to clean up a little. I also boiled a round of hard-boiled eggs in my cute little steamer. I had planned to make some tuna salad (with a couple of chopped eggs in it), and some egg salad. But I didn’t even have any canned tuna in the cabinets! So we just went for all egg salad, which Emmie was very excited to see when they got home. She climbed right up on the counter and asked to help, and then got very busy taste-testing it once it was finished!

And the eggs come out absolutely PERFECT every. single. time!! (I wish I had a plain one to eat right this second now actually, looking at this photo.)

And can you tell how much she loves the stuff!? Have you ever met a child who loves “salad eggs” as much as this girl!? (That’s what she calls it, instead of egg salad, it’s salad eggs, and I love that.)

 

We did bedtime after she decided she had had enough salad eggs, and although it was a little later than usual, she did good and things went pretty smooth. It’s absolutely freezing (even in my robe & warm fuzzy socks), so I’m heading to the couch and my super soft, super warm blankie, to cuddle up and warm up and watch some tv.
