Peruvian Roast Chicken

Please just look at how beautiful my girlies were for church this morning! Addison got this new dress and sparkle shoes out shopping with Grammy yesterday, and it made her look like such a big girl! And Emerson was wearing mommy’s gold hoop earrings, looking more like 12 rather than 9.

Jeff was running the tech booth in GC kids today, so he snapped this pic during the opening hype song.

We tried out another new restaurant for lunch today, called El Pollon, which is Peruvian. It’s down on West Pensacola street, in a building that used to be a couple of different restaurants through the years. I think this newest iteration just opened up within the last few weeks. I really wanted to try their lomo saltado (sauteed steak with onions & tomatoes), but we decided to go with their specialty, which is the rotisserie-style chicken. The girl at the counter helped talk us through it, and we went with the whole chicken family meal, but paid for the upgrade to all-white meat, since none of us really like dark meat. Then you get four sides with it, so we chose white rice (the girls’ choice), Peruvian fried rice (suggested by the employee), onion rings (Jeff’s fave), & fried yuca (my choice). It also comes with little sauce cups of some sort of mayo and a spicy green sauce, and I loved those dips and mixed them together which was even better.

And we got two of these Inca Kola drinks to share, also by suggestion of the worker, and these were kind of like a cream soda, and they were very good. And you guys, this food was so good! Very simple, but so very delicious. The chicken is so flavorful and juicy, and all the sides and sauces went together so well. We ate 3 of the 4 of these giant chicken pieces, and most of the sides. But I saved enough rice and chicken for Emmie to take for lunch at camp this coming week, so she’s super excited about that. Anyways, definitely recommend this spot. Super nice people, and super yummy food.

When we got home, I wanted to get a picture of the back of Addie’s cute dress to send to Grammy, before she changed out of it.

Grammy found these cute little soccer shirts on super sale at Walgreen’s lately, and the girls thought they were super cool.

Then we pulled out all of their new school supplies and backpacks, and got all the things labeled with their little name stickers we always use, and got everything packed away into their new backpacks.

Addie specifically asked me to take a picture of her and her new dino again today, and Emmie had to go run get hers too so I could include them both.

After a little bit more clean-up in Addison’s bedroom, we were back outside in our tiny blow-up pool. First though, I made a gigantic iced coconut latte in Emerson’s fake Stanley, since I needed one myself, and knew the girls would definitely drink a bunch of this too. And of course, they did do just that. But after I sat out and got super hot, I got in and played with them for a while, until I got back out to read again and let them just do all their crazy games.

I made those viral grinder subs that went crazy wild a few years ago, that we also loved a lot a few years ago. It had been a while since we had them though, but they now remind me of summer and backyard pool days, so it felt like the right choice tonight.

And I already packed myself a deli container to make myself a grinder salad for lunch at work tomorrow, with the meat and cheese on the bottom, and the lettuce on top, with a little tiny jar of homemade dressing on the side. I also packed up the rest of the tomato to take as well. And I just love these sandwiches, and the way you mix up the lettuce and veggies in that dressing. I always get extra salad on the side, and eat it up with a fork as I eat the sandwich as well.

After we finished eating dinner, and I got the kitchen cleaned up a little bit, I got started sorting puzzle pieces for one of my new puzzles. I got them all mostly color sorted as best as I could, and then also got started putting the edges together. Then it was time to put the girls to bed, so we headed off to do that.

Unbeknownst to me, Addie was also working on her own tiny princess puzzle, while I was working on my puzzle.

And now that the girls are asleep, I need to go back and wash up some dishes. There aren’t a lot of things, but there’s a few big items, and LOTS of cups and water bottles. So I’ll pop in my ear buds and listen to an audio book while I work, and then hopefully have a little bit more time to work on the puzzle again before my own bedtime.
