Keto Lettuce Wraps

Emmie had a good morning drop-off today, but was wondering why she was wearing her heart dress if it wasn’t “Valentime’s” Day. I told her she could wear a heart dress whenever we wanted, because it was cute! And Grammy reminded me, that after open-heart surgery, hearts were kinda her thing now!

 

I love this first photo of her from school, playing dress up with her little friends. When I asked her about it tonight, she said they had their blankets because they had to stay there at the hospital with their babies for four days. And the other little girl was apparently dressed as a racecar driver 😉

 

For dinner, I made some keto Asian Lettuce Wraps, slightly adjusted from this recipe based on what I had on hand in my kitchen. And it turned out sooo good!! I measured out my 1/2 cup of brown rice, and all three of us loved this meal! Emerson even cleaned her plate, and Jeff had a giant plate of seconds. And I get to eat it again for lunch tomorrow, because we had just enough leftovers for one more meal.

We cuddled and watched “A Bug’s Life” together after dinner (finally finished it after a week or so), and Emmie talked to baby sister and put her head on my belly, and kept patting my belly and trying to feel Baby. It was really stinking sweet.

 

Bedtime was quick and easy tonight, and she was really sweet and lovey.

There weren’t a ton of photos from today, and so this is really short and sweet. For some reason I feel the need to apologize when the posts are short or the days are just “regular and boring,” but that’s just how it is somedays! Most days, really. So that’s all there is, there isn’t anymore 🙂
