Fresh Air

When you wake up early at 6:30am, you get to lay in Mommy & Daddy’s bed watching videos & eating gummies. So I guess, why would she not want to wake up early? Haha. Also, if you haven’t tried putting a soft blanket under your sheets on cold nights, you’re seriously missing out. It’s the warmest, coziest thing, and it’s my favorite. (I use a small-ish one, because my hot-natured hubby doesn’t need any extra warmth.)

And now that it’s not my birthday anymore, I’m back to leftover tater tot casserole for breakfast, and leftover chili for lunch, which is certainly not a bad thing, just “regular.”

But shortly after starting my lunch break, my sister texted me asking if we could meet up real quick, so that I could give her my opinion on some things related to the triplets’ first birthday party. So we both finished eating our lunches at our offices, then she walked over to my building so we could sit outside at the picnic tables to get some fresh air, while giving my advice. We got to just sit & chat for about 25 minutes, and it was so nice! We decided we needed to do this about once a week, so we’re going to pick a day for her to come over & we’ll eat our lunch outside once a week, until it gets too hot to do that!

I’ve been forgetting to save and share the photos from the teacher/parent app lately, so I went back and saved a whole bunch of them today. Looks like they made cute little dinosaurs today!

I picked up my little baby girl after school & work, and I was very excited to see her cute face, after yet another crazy, hectic day at work. Her and her teacher Miss Jessica even surprised me with a cute little happy birthday card! And Emerson specifically asked me to take her picture with the card by this tree on the way out.

At home, I made a new-to-us, but super simple meal, with just polka kielbasa sausage, some frozen veggies, and pasta. I saw one of my Instagram girls make it last week, and it looked so simple but yummy, and that’s exactly how I like my weeknight meals!

Boil water, add pasta. In a separate large dutch oven, saute one diced onion & the sliced sausage in a little butter & EVOO. Add about 3-4 large handfuls of this bag of frozen veggies, put the lid on, and the veggies will steam in the pot all by themselves. Stir it all up to get all the good browned bits mixed into the veggies, add some S&P, serve the sausage & veggies over noodles, and it’s delish!!

I wasn’t sure if it would be good enough on it’s own without any sauce, so I grabbed this one from the fridge that was already open from a recent pizza night, just in case. Emerson was sampling the shredded cheese from her plate while I finished everything up.

It doesn’t necessarily look pretty, but believe me, it’s so good! All the good browned bits from the sausage gets all over the veggies (look at that browned cauliflower down there!), and there’s a ton of flavor. It was so simple, but my slightly picky hubby & toddler both loved it, we all had seconds, and Emerson ate more sausage than I could keep track of.

Emerson specifically asked to wear these reindeer jammies, that she’s literally been wearing for the past like, 15 months. She’s just so tiny, she can fit into last year’s Christmas pj’s. Like, 2018 “last year.” She also asked for her goulash, so she layered it on thick, thick, thick again, and got ready for bedtime.

But then the actual bedtime was really rough. She was super whiny and kept crying, and was trying to do all the things she could think of to stall. It took me probably about 45 minutes to do the whole routine, probably twice, plus a few more songs thrown in. I took a break in the middle of all that for my own sanity, and when I came back in she was good after just one song, and one “Jesus Loves Me.”

I got all the dishes washed while listening to my audio book, and cleaned up the kitchen.  Now it’s time to go get in my jammies, and my warm cozy robe, and curl up on the couch to watch an episode of “Home Town,” which y’all should know is my very favorite HGTV show, with my favorite Erin & Ben Napier. Which by the way, we’re going to Laurel, MS, in March! We’re road-tripping with my whole family to Missouri for my cousin’s wedding, so Jeff, Emmie and I are going to stay at a cute “Home Town” AirBnB for the night on the way back to Florida. I’m so super pumped about it! Hoping I can just casually bump into Erin & Ben on a walk around the neighborhood while we’re there 😉
