Poppyseed Chicken

Neither Jeff nor I were serving at church today (for the first time in a while), so it was nice to have a bit of a later morning, and go to church at the same time all together. And my girls were so stinking adorable today, in their very summery dresses and their hair pulled up.

Emerson specifically requested to go back to Prime Time Addaa for lunch today, and we weren’t going to deny that request! We invited folks to come with us again, and our friends Paul and Reagan joined us there. Today, though, I ordered the butter paneer, which is the cheesy, vegetarian version of the butter chicken, and it was delish. Both the girls and I liked the cheese better than the chicken, and even Jeff really liked it too, and admitted he’d happily eat vegetarian if it was Indian food!

Addie did “clean plate club,” and then had seconds and ate most of that too. Emerson also ate super well, and had abot three helpings, and then cleaned up her sisters plate too.

We picked up a Walmart grocery order after lunch, and then had some quiet feet-off-the-floor time, while it was pouring rain outside. I started reading our book club pick for this weeks meeting while we were also watching “The Sound of Music” (both of which are coincidentally set in WWII), but y’all know it was only a matter of time before I fell asleep on the couch and had a little afternoon nap.

It was 5:15pm by the time I woke up, but I was so disoriented I was somehow thinking it was 5:15am the next day, but confused how it could be light outside if it was so early?? It took me a minute or two before I realized it was still Sunday, but just time to wake up from my nap…

And by that point, it was just about time to start getting dinner started. Addison asked to help me tonight, and she was so sweet, and only made things a tiny bit harder and messier 😉 We made the poppyseed chicken recipe my mom used to always make, that I actually kinda forgot about for a while. But it turned out sooo super good and delicious.

Just look at that perfectly golden crispy buttery cracker topping! Yum!

Emerson ate like three helpings tonight, and Addison ate decently well too. I washed some dishes, Jeff did some laundry, and the girls re-tidied the living room again tonight after playing and dragging stuff all around this afternoon. I ended up making a second pot of rice for all the poppyseed chicken leftovers, so I could portion it out for lunches. I finally just ordered Emerson a little thermos for her to take hot food to camp in her lunchbox, so I made three little bowls for her, and two for me, so we’ll both have good lunches this week.

Bedtime was super easy tonight, and the girls are snoozing away now. I started watching “Every Year After” on Amazon Prime last night, and watched the second episode tonight, and I’m obsessed. I read the book when it first came out a few years ago (I’ve read all of Carley Fortune’s books and love them all), and the show is actually really great as well. I’m tempted to binge-watch it all super quickly, but I also really need to focus on reading my book club book this week!
