I started off the day by throwing together a breakfast casserole for our Sunday school class, from this recipe. When buying those pre-cooked sausage crumbles yesterday, I wasn’t thrilled that they cost about $1.50 more than a package of regular, raw sausage… But then when all I had to do this morning was dump it out of the bag, I decided it was money well spent, time well saved, and one less dirty dish!
This little baby girl slept a bit later again today, and made it until about 8am in her crib.
Then once she was ready for church, she had a chocolate cereal bar for breakfast, and was still hungry, so she had a second one!
The cheese got nice and crispy on the casserole (which is how Jeff and I like it), but I might bake it covered with foil for half the time next time, so get the cheese more melty & less crispy. But it was still delicious! It was basically a sausage, egg & cheese biscuit casserole, and I for one am glad we had a smaller class today, and ended up with just a little bit of leftovers.

After church, we got a ride to the car on the golf cart, and so much sass… (And side note, I had a chat with Jeff over the weekend about wanting him to take more candid photos, so that I’m actually IN the photos sometimes. He needs to step up his blogger-husband game! So, you’ll actually see two whole photos of me in today’s post.)
So excited to see Grammy driving up int he Jeep, to pick her up so she can ride with her to lunch!
Lunch at Dairy Queen with Grandmommie, Grammy and Papa.
She saw that all of our ice cream came in cups with spoons (but her kids ice cream was in a cone), so she decided she needed hers in a cup with a spoon too.
After lunch, we headed home and Emmie slept for just under two hours. I washed some dishes, and Jeff ran to Walmart to pick up our grocery order for the week. Somehow, they were just “completely out of chicken,” so they didn’t put any in my order. So we ended up back at Publix again for a super fast trip, for chicken & garlic, because Walmart was out of that too.
Once we got back home, I got busy chopping and prepping to get dinner in the Instant Pot. Tonight, I made “Creamy Chicken Paprika.” Plus, I added mushrooms, because it just seemed like a good idea. Oh, and I added a green bell pepper, since I couldn’t find diced tomatoes with the bell pepper included. (Photo of recipe below, since it’s from an actual cookbook and I don’t have an online link; although my quick Google search just now did yield a few that looked similar, but not identical.)
While I was chopping and dicing and working away, these two were being super cute and snuggly on the couch, watching little kid YouTube videos together. I was jealous of the snuggles!
They transitioned to the floor, where she was somehow sitting in the crook of his arm, like, in his armpit… No idea what that was all about…
And then while the Instant Pot did it’s thing, I got jealous and came to join the couch snuggles.
So this stuff doesn’t exactly photograph well (I tried twice – once on the counter & once and the table) and it was more liquid-y that I expected, but it tasted good! I think I might do something to jazz it up a bit more next time (although not sure what right now), and maybe add some cornstarch at the end to thicken it up a bit, but overall, we both liked it. And Jeff got seconds, so that’s definitely saying something.
After dinner, we all went outside to play and run around, and Emerson had a great time. And the weather felt really nice again tonight too.
And then she wanted to just sit and eat a cup of ice again, so of course baby gets what baby wants! haha 😉
A bunch of stuff needs work in our back yard (things are wayyy overgrown), but it’s still so nice and we love hanging out back there.
We always ask her who “she wants to say” when we read this book now, and for a while it’s been Grammy. But tonight, she chose “Mae Mae!” (aka Aunt Meggie)
She was pretty difficult to get ready for bed tonight, and she tried all the stalling tactics she could think of. Both Jeff and I did a round of lullabies, and Jeff just put her down after his second round. Her eyes were still open the last time I checked the camera, but I’m really hoping she’ll just give in and fall asleep soon! Mama’s tired too, and I’m ready to just sit down and relax!
