Air-Fryer Chicken Burgers

After a three-day weekend spent mostly at home and at our families’ houses, my girls still had a happy, easy drop-off at school this morning. And praise the Lord for that!

I didn’t have many options to bring for my lunch today, and I also didn’t have time this morning before work to figure it out. So I asked my friend Amanda to go out to lunch with me today, and this yummy “sticky chicky” Korean burrito from Takko. I usually get the street tacos, but wanted to try something different. This was good, but it was too much rice, and needed more sauce. I’ll go back to the tacos next time.

And then when we got home for dinner tonight, and I made one of our favorites – Bleu cheese chicken burgers. I usually cook them in a stove-top griddle/grill pan, but I tried them out in the air fryer tonight, and they came out super juicy and yummy. I also tried roasting some green beans with them, but those didĀ not turn out good, so we didn’t even eat those.

I split one burger in half for the girls to share, and they both ate their entire half, and I was so proud of both of them for that, but mostly Emerson, since Addison eats just about anything and everything these days šŸ™‚

And although the burgers came out good from the “sear crisp” function on the sear plate in my air fryer, it made an absoluteĀ messĀ on the pan. It was really crispy and blackened and sticky. I bought this stuff recently (after seeing a commercial for it while watching “Survivor” and also seeing it on a cleaning TikTok, and totally falling for it), so I sprayed it on and let it sit for about half an hour while I played with the girls…

Then after getting the girls into their jammies, Jeff fed Addison a bottle, and Emerson cuddled up with them to watch some train videos. It only took a good “power wash” with the sprayer (as I like to call it), and some regular scrubbing with the scrub brush, and my pan was (almost) as good as new! I’d definitely recommend this spray wash stuff, to use one these tough messes. (I still use regular dish soap for most things.)

Then we went through the whole bedtime routine with the girls, starting a few minutes past 8pm (slightly later than usual, but not too bad), but neither girl was ready for bed and neither would just settle down. So it was like 9pm before Emmie finally settled and started falling asleep, and at 9:30 while I’m writing this, Jeff is still trying to rock Addie to sleep, but she’s fighting it tonight.

We think her tummy might be a little messed up tonight, causing her to have trouble settling down, so we’re praying the gas drops we just gave her helps a little bit, so she can fall asleep soon.
