Pickled Veggies

I had two very smiley girlies this morning, even though we were all very sleepy and running a bit late…

But Jeff and Emmie had time for a quick gas station breakfast run, since she didn’t have time to eat her cereal at home this morning. 

I have been craving a Vietnamese bahn mi sandwich so bad recently. And then a memory popped up in my Facebook this morning from a few years ago when my work bestie Heather and I tried it for the first time. So I messaged her super early and asked if she wanted to go today, and obviously she agreed. I tried a different sandwich this time, the “combination” which had three kinds of meat, instead of my usual grilled pork one. And we both got the sea salt coffee. And everything was soooo good. i definitely satisfied my craving, but I could also totally eat it again tomorrow for lunch. I absolutely love those pickled veggies!


Sloppy Joes with rice and veggies for dinner, and still listening to our new Johnnyswim record. They actually announced today that they’re releasing tour dates and tickets tomorrow, and one of the stop is Jacksonville in October. So I think I’m gonna look into that, and maybe we can go see them again!

After dinner, Jeff and Addie had to run to the pharmacy to pick up a prescription, and Emmie and I worked on making some homemade Valentine’s Day cards for her classmates. We had already picked out some pencils at the Dollar Tree a few weeks ago, and decided we would make our own.

Tonight when we got started, we were researching cutesy lines to write out, and one of the options inspired us to actually use a line from “Wicked!” The line turned out super cute on the cards, and it was her idea to draw half pink & green hearts. During the song “Dancing Through Life,” when Galinda gives Elphaba the pointy black hat, she says, “It’s really, uh, sharp don’t you think? You know black, is this year’s pink.”

But then I realized she actually thought the line from the song was, “You know Boq is this year’s skink.” I was literally dying laughing when she said that. I immediately texted it to Jeff, partially so I wouldn’t forget what she said, but mostly so I could share it here because it was so cute. Thursday night, we’re going to poke some holes in the little cards so we can tuck a pencil in each one, before she takes them to school on Friday.

When Jeff and Addie got back from their little field trip tonight, they surprised us by bringing home Frosty’s from Wendy’s for dessert.


Then of course it was bedtime so we got the girls changed into their night gowns and started on all of our normal bedtime things.


I simply don’t want to wash dishes tonight, so I’m just gonna go crash on the couch instead, and deal with the consequences another time…
