Moana Water Day & Coconut Curry

Hooray for another Friday, and another water day – but today Emerson chose for it to be a Moana Water Day! This now starts weekly Friday water days for the rest of the summer, but only for Emmie, because Addie’s class is too young so she’ll have to wait until next summer.

Emerson clearly had a great time playing out in the water today, and Addison had a fun day too!

And you know the tiny baby fell asleep on our drive home.

For dinner, I made a delicious Thai coconut chicken & veggie curry over basmati rice. This specific sauce was the reason we made our random Trader Joe’s trip one night last weekend, and I bought three jars that night. This is not the first time I’ve made this, but I do think it was the best time I’ve made it. It was soooo good!

All of us cleaned our plates. Emerson wasn’t sure she was gonna like it, but I told her she would, and I was right and she ate all of it and asked for more chicken.

Jeff and Emerson ran to Walgreens together after dinner, and Addison and I had lots of sweet playtime with just us two.

But I know when she starts randomly laying her head down on a pillow or an ottoman or even the floor, that girlfriend is tired.

So once they got back home, we got both girls ready for bed, and started on their bedtime routines, just a little bit later than usual. Emerson chose for me to read “Peter Pan,” while Jeff fed Addison a bottle of milk and rocked her to sleep.

One of the other things I got at Trader Joe’s last weekend was a box (or two) of these chocolate croissants that I’ve heard are just amazing. You have to let them “proof” (or rise) overnight on a baking sheet, and then bake them in the morning. So I’ve gotten these all ready to go tonight, and then I’ll just scramble some eggs to go with them, and breakfast will be done.

I almost always choose not to wash dishes on a Friday night, and just leave it for sometime during the day on Saturday, and I’m definitely doing that tonight. I just wanna go plop down on the couch and chill out for the rest of the night!
