Japanese Curry Chicken

I only had my one baby girl this morning, and although she was very sleepy (as she is on most Thursday mornings), but she was still sweet, and chatting and pointing about the birds chirping.



We got a couple of pictures of Addie at school like usual.



And we got a couple of pictures of Emmie from Grandmommie and Grammy too!

For dinner tonight, I had just been planning to make some sauteed chicken & onions, but on the way home, I realized I was in the mood for some sort of Asian meal instead. So I spent the ride home thinking about what I had in the fridge/pantry, and what I could turn it into… And I got lucky! I had more potatoes from when I made baked potatoes the other day, and some baby carrots that needed to be used, and two more of the Japanese curry roux cubes from a while back. And that was all I needed for the perfect chicken curry!


Plus jasmine rice and green onions and chili oil, and YUM.  The last time I made this, I did it with beef, but I think I liked it with the chicken even better. And I made twice the amount of rice we needed for tonight, so I would have enough leftovers to go with the curry as well, and the portions worked out perfectly.


Addison ate her plate of plain white rice (she didn’t want any of the carrots I tried to give her), and then rolled around in the living room floor while Jeff and I finished eating.


Then she was very helpful cleaning up, and wanted to help put stuff away in the fridge.


She loved this baby animal video Daddy put on for her to watch, and just couldn’t get close enough to see all the cuteness.


While I washed up all of the dishes, Jeff and Addie took out the trash and recycling, and then took the cans to the road. They also did something else which I can’t remember, but Jeff needed to sit down under the living room fan on high blast to cool off for a while. So I got Addie changed into her jammies, and got her a snack, and we watched an episode of Bluey together. Then she was getting super sleepy, and wandered over to Daddy and cuddled up (with her stuffed crab), and immediately closed her eyes. It was extremely precious.


Dishes were done early, and this post is done early, and we also picked up everything in the living room earlier, and so now I’m feeling productive and free! Haha 😉 Ready to just plop down and turn off my brain (I lost all my brain cells working on a very convoluted and complicated case at work today), and just veg out before bedtime.
