Japanese Curry Beef

Then since Addie threw up at school yesterday, she had to stay home today. Girlfriend may have started off calmly eating a snack on the couch, but she was up & at ’em and acting totally normal and silly all day!

I made myself a slightly weird but totally delicious breakfast – fried eggs on white rice, topped with chili oil and green onions. I’ve done something like this before, after seeing it in a video, and it’s actually really good. I love a savory breakfast, and the over easy egg yolks mixed in with the buttery rice is so good and creamy. Like I said the last time I did something similar, this is pretty typical in Asian cultures, just not in America, but I love it.

And after Addie had one cookie, one applesauce pouch, and some gummies, she had some white rice for breakfast too. And then her and I had a great morning together. She colored and played, and watched some of “Encanto” while eating pretzels.

She literally made this whole mess in about two minutes – she dragged laundry all over the room, and then emptied out the toy basket, and then just sat there watching tv, ignoring all of it. And then she was terrible at helping me clean it up 😉

She was being extremely silly while we ate lunch, laughing and squealing and making funny faces. She was totally back to her normal self. I decided she didn’t have a stomach bug, but maybe just had a bad reaction or something to her lunch yesterday.

After I got Addie down for her nap, I got dressed for work. Jeff went into the office this morning while I stayed home with Addie, then we switched. He came home, and I headed off to work, with my FDC-branded homemade iced coffee.

Addison slept for about 3.5 hours, and then when she woke up, Jeff took her to pick up Emerson from school early. Then I got to come straight home after work, which was just so quick and easy, and a nice change. And since we had extra time before church, I cooked dinner tonight.

I used this Golden Curry Japanese curry mix for the first time tonight, and it was incredible. You just sauté the veggies, brown the meat, then add water to simmer, and mix in the little curry roux cubes. There are five in this box you can break off and add (I should have taken a picture of them), and I used three, not wanting to make it too spicy, but it wasn’t spicy at all, and I think I could have probably used the whole box for even more intense flavor.

I also added a little cornstarch to thicken it up (even though directions didn’t say to do that), and I thought this came out so good. I was really impressed with myself, even though I technically didn’t do too much. The only thing I’ll say though, is that even though I let it simmer for about 25 minutes, the beef wasn’t quite as tender as we would have liked. I think next time, I want to adapt it to the crockpot, or even try it in the Instant Pot, to pressure-cook it for super soft beef. Even still, it was super duper tasty.

After dinner, Jeff stayed home with Addie to complete her “sick day,” and Emmie and I went to church together for Wednesday night activities. It was bedtime when we got home, and so we started getting the girls ready for bed, and Addie was playing peekaboo with us.

And wouldn’t you know it, this girl fell asleep in my bed again tonight, while we listened to our nightly lullaby.

In the mood to color some more tonight, so I think that’s next up on the agenda, since I’ve already taken care of everything in the kitchen earlier tonight…
