Jeff was serving in the sound/tech booth today, so he went to church early. I had the day off, so the girls and I came later, after getting dressed and ready and all bundled up.
We found these cute little Squishmallow backpacks at Claire’s yesterday, on the $5 clearance table. But since we got her ears pierced, we also got 50% off everything else we purchased, so these were only $2.50! Emmie had her tiny Bible in hers, but Addie packed a seashell and a snack in hers 🤣
Today was baby Hayden’s baby dedication at church, so the whole family was there, and we sat right down on the front center row. Meg led one of my current favorite songs, and brought me to tears! And of course I cried during Hayden’s dedication as well. We had Emerson sitting with us in big church, but they also had the leaders bring all of GC Kids over into the sanctuary to watch Pastor Bo and Ms. Megan, and that was really special too.
And then at the end of the service, Pastor Brian had asked a few people to share some special scripture passages that were important in their lives, and Jeff was one of those folks, and he did a great job sharing his scripture from Jeremiah.
Then of course we had some family photos all together after the service, and we opened up the back of the car to pass out oranges to as many church friends as we could.
And then a big giant family lunch at 4 Rivers, with approximately 20 people or so. I had this chili mac bowl which was spicier than I anticipated, but I liked the cornbread crumbled on top and it was pretty decent.
Addie accidentally fell off a little brick wall she was walking on and scraped up the back of her thigh, so lunch ended in a bit of tragedy. But we got her home and got her leg bandaged, and Jeff got her down for a nap. Emmie and I made a quick run to UPS right before they closed to drop off some returns. We then walked some oranges over to our next door neighbors, and stayed and chatted with them for a little while.
When we got back, we decided to try out that random little dessert recipe I saw online earlier this week. She was so cute in her apron, and just super excited and willing to help however she could.
And as soon as we got the little orange posset in the fridge, we woke up Jeff and Addie from their naps, and I got started on dinner. I was trying out a new recipe I saw on TikTok, for Thai Chicken Meatballs.
Nana got me this little scooper thing for Christmas, so that worked out perfectly to use tonight for the meatballs. This was the first time I’ve ever actually made homemade meatballs, and I was pretty proud of myself!
I realize they’re pretty flat on one side, but I’m not concerned with the shape, just the fact that they held together, and tasted delicious!
Emmie didn’t like the meatball, but Addie did, and Jeff said he was actually still too full from lunch, so he just didn’t eat much. But I thought it was pretty good!
and here’s the little orange posset things we tried out. They don’t look quite right, but I think that’s because they have pulp in the cream mix, since I didn’t strain it. They also didn’t really set up in time, even after 2.5 hours. So we’ll see if they’re ready by tomorrow, otherwise, it’s just a failed experiment, which may be the case, and I honestly wouldn’t be too surprised 😉
So instead, we had some of the oatmeal cream pie ice cream we just happened to find in the freezer which we had actually forgotten about from a couple months ago.
Guess what – we still haven’t finished the final movie of Lord of the Rings, but I think tonight actually is the night, and we’ll finally make it to the end tonight.
