Go Pink for Breast Cancer!

Today, all around Tallahassee, it’s “Go Pink for Breast Cancer” day! Businesses all over town hang pink flags or signs or ribbons, and some even hang pink bras, and everyone is encouraged to wear pink. So many people participate, and it’s pretty fun to see so much pink all over town! Growing Room always participates, and they also set up a little pink lemonade stand for the afternoon, to collect donations for the Joanna Frances Living Well Foundation. My Mama and my Aunt Suzanne are both breast cancer survivors (and have been cancer free for over five years now!), so it’s definitely a special day for our family!

There was a new little girl in her class this morning, and her teacher Ms. Sheila asked Emerson to go over and help calm her down, because she was sad and crying. And so Emmie walked straight to her to check on her! She has the most tender little heart!

Around mid-morning, I sent a text to Meg saying I didn’t bring anything for lunch today (we had nothing at home to bring!), and what were her plans…? She had also been planning to text me, because she hadn’t brought anything either! So I picked her up and we went to Moe’s together! And this was a most delicious burrito.

I took a quick selfie walking back into work, to send to the family, to show I was wearing my pink today too. (I don’t actually look that great in pink, so I don’t have an all-pink dress or anything, but this is good enough, right?!)

After getting photos or selfies of everyone in the family (except Jeff, he doesn’t own pink, and only one of the triplets was wearing pink today), my Mama put together this little Go Pink! collage of all of us!

Jeff’s training ended early again, so once again he was able to go pick up Emerson from school, before I was even leaving the office!

It’s been really nice this week to just come straight home, and get home 30 minutes earlier than usual! It gives us more time together, and makes dinner time less stressful, since I don’t feel quite as rushed. While Emmie and Daddy did snacks and mail and wagon rides and all the things, I made a pot of chili for dinner. While it’s not exactly “chili weather” here in Florida yet, it was still yummy all the same!

After I got the chili all made up, and while it was simmering, I also sauteed some extra red & green bell pepper, onion & mushrooms. I’m making breakfast burritos tomorrow night, so I’ll use these veggies in my burrito, and I saved myself a step tomorrow night.

Can’t remember if I’ve shared my chili recipe on my blog before (actually, it’s my Mama’s recipe, but she uses beef, & I use turkey), but it’s super simple, so here we go if anyone is interested…

Saute diced onions and a few cloves of diced garlic in 1 tbsp butter & 1 tbsp olive oil, add 1lb of ground turkey, season with salt and pepper, cook until browned. (I also added a little bit of diced red & green bell pepper today, because I had it already, but I usually don’t, but it was good with it!) Add packet of chili seasoning, 1 can of petite diced tomatoes, 1 small can of tomato paste, 1 small can of tomato sauce, 1 can of V8 juice, 1 can each of dark & light kidney beans (drained & rinsed). Mix all together, simmer for 15-20 minutes. Serve topped with cheese, sour cream and chips/crackers of your choice! (Ritz, Saltines, Fritos, oyster crackers, etc…) So yummyyyy!

I wasn’t sure if Emerson would like it or not, but she decided she did like it, when I fed it to her! She hates to get messy, so it was good when Mommy made the bites, and put them neatly into her mouth 🙂

And we still had one cupcake left from Sunday night, so we let her have some. She actually just ate some of the icing off the top, and decided she was done. So I swiped off the rest of the icing, and I ate the cake part myself. 😉

She had a great time in the bath tub tonight, and was just swimming and splashing around, and having a grand ole time. I hate to jinx us, but I think our crazy bath phobia is finally over, and she’s loving bath time again!

She took her little bag of cereal and her cup of water to the bedroom with us, and she snacked away while Daddy read her books. (She loves to sit in the floor with him lately, and always tells me to sit in the chair.) She was also being really sweet and sharing little pieces of her cereal wit Pretzel, and he was being really gentle taking them from her. It was all very sweet.

She wasn’t sure if she wanted Mommy or Daddy to hold her for lullabies, so she started with Daddy, and a few minutes later, decided she wanted Mommy, so I came back and settled in. After that, it was business as usual and she was good to go after our three usual lullabies.

I got all the dishes washed, and lots of leftovers put away. I also made little to-go tubs and bags of cheese & sour cream, so we can just grab & pack it up in the lunch boxes in the morning. (Well, only for me, because Jeff already has lunch plans with his work buddies tomorrow, but we’ll keep this for both of us for Monday lunch too.)

And now it’s time to rest and relax! Going to attempt to find a new show now, since we still haven’t found something new since finishing The OA early last week. Night friends!
