Curbside Books & Greek Salads

Emerson wore a cute blue hair bow to match the blue hair bow the mama dino was wearing on her onesie, and it’s all just so adorable!

I finished this audio book this morning, and really enjoyed it. The main characters are all mostly female, and we get a good look at female friend/family relationships, with a fun lighthearted Midwest feel.

I ran home on my lunch break, to throw together some marinade for chicken, to cook for dinner, to throw into giant Greek salads. The marinade smelled soooo good (lemon-y, herb-y, and garlic-y), and just smelling the marinade made my mouth water and go tme excited for dinner! (I used the marinade recipe from this blog, and added basil because it’s my fave and that’s my business.)

And then on my way back to work, I went by the public library for the first time in about two months, because they started doing curbside pick-up for holds today! (This is a great idea and I loved it, but they were superrrr slow and made me late back to work.)

I started to listen to a really intense drama/fantasy/sci-fi book today, but it was too much and too hard to follow, and that’s not what we need right now. So I “returned” that to the library, and went the other direction with a little rom-com instead.

So after the chicken marinated in the fridge all day, I cooked it up on the stove-top grill pan inside. I also chopped up a ton of veggies and toppings, and also made a homemade dressing, that my friend Emily sent me. Then I put it all together and made us each a giant Greek chicken salad for dinner. And Y’ALL… This was delicious.

Emerson won’t eat salad, so she had a deconstructed Greek plate, with chicken, carrots, pita, cheese, and pita bread. But she ended up liking it the best with the chicken stuffed inside tiny pieces of pita, and eating it like a mini sandwich.

She ate really well, and was being really sweet, so we let her have some candy for an after-dinner treat. She ate about half of the lollipop, and then we wrapped it up to save for another day.

She was super sweet at bedtime tonight. She chose this book of bedtime Bible stories, so I read one, and then she wanted to read one to me. I grabbed my phone and took down exactly what she was saying, because these are the things I want to remember!

“A little baby was born and life was born and donkey went to da fountain and dat’s da end. Dere’s one more page. I gotta read about dis one. He looked at his hand and he go’d somewhere. What’s dis guy? He’s a silly guy. Why he’s silly? Why he’s looking through da window? He’s silly!”

She was really sweet, and after she finished reading her story and flipping the pages, she asked me to read one more story. We did family hugs and prayers and lullabies, and then after I laid her down, she requested one more lullaby.

Today is May the 4th, so for Star Wars nerds like my husband (and now myself), that means “May the 4th be with you.” So we’re going to watch the most recent one (The Rise of Skywalker) on Disney+ tonight, cuddled up on the couch with a bucket of freshly popped popcorn! (There’s freshly melted butter in the coffee mug.)
