Cuban Food & Lemon Cookies

After getting ready for work this morning, I also got ready for dinner. I threw this pork loin in the crock-pot, on a bed of diced onions, and then seasoned with S&P, garlic powder & onion powder, and then poured almost this entire bottle of mojo marinade on top. And with that, dinner was mostly prepared!

Emerson was scared during that crazy storm that was happening first thing this morning, so she was dressed and ready for school, snuggled up in Daddy’s lap, wearing her headphones. Loud noises like lawn mowers and big trucks and vacuums scare her, so that’s why she has these little pink headphones. I wanted to take some photos at home since I knew we wouldn’t want to do it outside at school, and she needed to keep the headphones on for the photos.

She took this little white bunny in the car this morning, and of course the bunny couldn’t go into school with her, but she didn’t want the bunny to be lonely and scared either, so the bunny had to come to work with me today.

Emmie got a fun hair style from her teacher today, and from her report and the photos, it looks like she had a good day. She even peed in the potty four more times today!

When we got home from work, there were only two things I had to do to finish the rest of dinner: 1) get the rice & beans cooking on the stove, and 2) get the plantains baking in the oven, both for 25 minutes, so that was perfect. While those things cooked away, I made up the batter for these lemon burst crinkle cookies I saw posted on Instagram the other day. And of course I had my cutest little helper!

I loooove chocolate desserts, especially the chocolate version of these crinkle cookies people usually make around Christmas-time. But I also loooove lemon desserts, and the lemon version of these cookies just jumped out at me the other day! The batter was supposed to be chilled for an hour, so I stuck that in the fridge while we ate and played, and then baked them later.

I also made up a small batch of egg salad, using they dyed Easter eggs we made with Nana a few nights ago. I actually took a poll on Instagram yesterday, asking if people eat their dyed Easter eggs or not. There were definitely some votes for “no,” but the majority voted “yes,” so I felt better about using them too. I was actually hoping that I would end up with blue egg salad or something, but it still looked regular 🙂

I used my Mama’s super simple recipe, and it turned out sooo good. And Emerson even loved it! She actually asked to eat it for dinner, so I gave her a scoop with her Cuban pork, and a side of corn, and she went to town!

She actually ate three servings of corn and egg salad, plus the pork I gave her (which is best to just call chicken so she eats it better). She hardly ever eats everything on her plate, but she joined the clean plate club tonight, three different times!

I love her goofy, crazy hair when we take her little ponytails down.We’ll have to wet it down in the morning in order to tame it a little bit, but I loved it tonight! I also love these teeny tiny jammies. It’ll probably be the last time she can wear them, because their 12m size and finally getting too small, but dang those tiny shorts are just too adorable!

Her Papa gave her both the white bunny and the yellow chick, and she loves them both so much. She wanted to hold them both tonight, and she was just so sweet about it.

She was sweet and cuddly for lullabies, and laid down nicely for bedtime. But just a few minutes later she was calling me back for one more lullaby. So I went back in there and gave her lots of hugs and sang another song.

And then I finished up my lemon cookies. It was actually harder than I expected, and I made another giant mess and had to figure out the best way to do it. They don’t look as fancy as the recipe photos, but hopefully they’ll taste good!

I washed up as many dishes as I could while the cookies were baking, and even though I didn’t get to all of them, I’m calling it quits for the night now anyways. Going to go grab a couple of my lemon cookies and a glass of milk, and settle in with the hubby for some TV time, right after I renew my super late car tag, that I should have done in January…
