Coconut Yellow Curry

The five happiest girls ever! These girls all love each other so much!

Beautiful skies this morning.

Both girls had a good day at school today…

Then at home tonight, little baby squish wouldn’t let Daddy sit down with her, she only wanted to be held and walk around and check everything out while Mommy cooked dinner.

I made a super easy, super delicious dinner tonight. I just sauteed chicken with onions & veggies, then added this Thai style yellow curry sauce and a can of coconut milk, then served it over rice. And it was soooo good. I think it was just as good as, or maybe even better than, restaurant take-out. Jeff and I both loved it! I knew Emmie wouldn’t love it, but I made her at least try it. She ended up just having plain rice & apple sauce though 🙂

I knew Emmie wouldn’t love it, but I made her at least try it. She ended up just having plain rice & apple sauce though 🙂 Addie only wanted a few bites of her own food again tonight, and then just wanted to be held some more.

I put her in her jammies after dinner, then Jeff fed her a bottle, and she was instantly asleep, as always.

Emmie helped me get some hot tea for all of us, and wanted to do every little part of it. I wouldn’t let her pour the honey in, but I did let her lick some off my finger, and she said, “Tastes like water day. But not.” No idea what that means, but it made me laugh out loud!!

Oh and Miss Jessica did these braided pig tails for her today, just like one of her little friends, which were adorable.

We made sure we did Emerson’s bedtime right on time tonight, because she was feeling a little emotional today and had three crying meltdowns in the span of 30 minutes, right as I picked her up from school. The rest of the night wasn’t so dramatic, but I figured she was probably tired and just needed sleep.

We were able to put Addison down in her bed very easily, and she’s sleeping soundly. I just checked on Emerson on the camera, and she appears to be sound asleep now too.

I’ve been watching my episode of Survivor while writing this, and I just watched the most bizarre challenge yet; it was both horrifying and disgusting, and somehow made me gasp & laugh at the same time. As soon as it was over, I got up to go tell Jeff all about it, because it was just too wacky and crazy to keep to myself. Click here if you’re interested, but do so cautiously 😉
