Cast Iron Skillet

Precious girl, as happy as always, in a cute dress Grammy got on consignment, that’s still in perfect condition! (At least until she got some strawberry stains on it at dinner. It’s currently soaking in the sink in OxiClean now though, so maybe I can fix it…)

I made a “discovery” y’all – Walmart has made a copy-cat of Trader Joes’ Everything But the Bagel seasoning, and it’s just as delicious! And it’s only $1.98 at Walmart. It was perfect on my avocado toast this morning! And now I can just add it to my pick-up order whenever I run out, without having to make an extra stop at TJ’s. Well, not like that’s a bad thing, but still…

Little Bit told us she had a good day at school today, but that she was was talking at the table at puzzles time and that she can’t sit by Elliot anymore because he has diarrhea. (I did laughing at that one!)

So one of my friends from high school messaged me the other day asking what size clothes and shoes Emerson was wearing, and what size the triplets were wearing. She asked for our address, and today she came by for a covid-friendly, contact-less drop-off, and told me later that it was in the carport.

I forgot to go outside to get it until I left for daycare at 5pm. I told Jeff to come outside with me to grab the box when I pulled out, but then we rounded the side of my car and were so shocked by how much stuff there was! Super excited to go through this stuff to pick out the bigger things for Emmie, and pass down the smaller things to the triplets. We love hand-me-downs around here! Thank you so much, Christi!

I always tend to cook a little differently when they boys are here with us, because I want to cook things they’ll actually eat, so food doesn’t get wasted or thrown away, leaving them hungry and wanting a million snacks all night long. So this week we’re going back to some of my “usuals” that I just never made while they were here, and tonight was frittatta night. One of my faves! (I didn’t actually intend to write this like a recipe, but I had all the process photos, so I’ll just share the simple steps, in case anyone wants to try it out.)

Brown 1lb sausage & 1 diced onion in cast iron skillet. Remove to paper towel to soak up some grease. (Also, I realized tonight how much I just love cooking in my cast iron skillet! I need to start using it more often.)

Saute red bell pepper, add a few large handfuls of spinach and cook down until wilted. Then add the meat back in to the skillet. (I use 3/4 lb, and save the rest.) Mix up 8 eggs, add S&P, add to skillet and stir lightly for a few minutes. Add some shredded cheese on top. (Tonight I added mushrooms to my half, with the eggs.)

Transfer to oven and bake for 15-17 minutes at 350 degrees. I always like having fruit & bread with it, but a salad would be really good too!

While I was cooking dinner and washing up a few dishes, these three were all cuddled up on the couch together watching videos, being the cutest little snuggle bugs.

We planned to give Megan the little pink potty for the triplets, but we wanted to try it out with Emmie first tonight, to see if it would somehow work a miracle and get her to pee in the potty like a normal person. But, no such luck… We also tried the insert on the big potty, but she still wouldn’t go. As soon as she got in the bath tub though, she couldn’t hold it any longer and peed in the tub, just like I warned her would happen…

We had to bribe her a little at dinner time to actually eat (she loved the frittatta once she started eating, but it took her a bit to get going), so we told her that if she ate all of the frittatta, she could have a small pack of M&M’s, so she got to eat some candy during her bedtime routine tonight as a treat for eating a good dinner.

And we read her new “Pretzel” book we got her for her birthday, and it was so cute and she loved it! And I did too!

She gave me tons and tons of kisses at bedtime, and told me she didn’t have any leftover for Daddy. She changed her mind though, and said she’d save him some for tomorrow. Then she snuggled up on my shoulder, put her hand around my neck, and whispered that she loved me. She is the absolute sweetest!!!

I washed up a few more dishes after getting her in bed, and while Jeff does some computer work for one of his side-businesses, I’m blogging and watching Netflix, snuggled up and cozy on the couch!
