Last weekend, we went out to breakfast at Bagel Bagel. It was delicious, but rather expensive. Today, I tried to recreate it at home, and made bacon, egg & cheese bagels, with cream cheese. They were good, but definitely not as good as at the restaurant ones.
Oh also, I baked the bacon, and it was perfectly crispy, and wayyy easier than all the popping and grease on the stove.
Emerson thought she didn’t want a bagel, so I didn’t make her one. She wanted cereal, so I made her a bowl of that, and she ate about half of it. Then she ended up eating plenty of bites of MY bagel!
She also really enjoyed munching on her own piece of bacon.
We had a super lazy morning, just playing and cuddling and watching videos and reading and letting Emmie play on her Kindle.
So I’ve been pretty much just carrying my tiny Kindle around with me all over the house, everywhere I go, and reading in tiny bursts whenever I get a few minutes. If you’re trying to read more, I’d suggest it! If you already have it within your reach, you’re much more likely to squeeze it in whenever and wherever you can!
Emmie had a turkey sandwich and cheeze it snack mix for lunch, and then went down easily for her nap time.
Her and I finally both got dressed around 3pm today (I did a TON of chores around the house while she napped, and Jeff mowed the yard), and we went out to run an errand. I need a new pot for the ZZ plant I got at Home Depot a few weeks ago, and haven’t been able to find one. We went to Ross, Bealls Outlet & Walmart today, and didn’t see even one pot anywhere. Emmie thought this little pig statute was Pua from Moana, and kept petting him. Even after we walked away, she was like, “I need to go back and pet Pua goodbye one more time.”
After we got back home, it was Jeff’s turn to head out and run an errand, and he took little bit with him so I could have a little bit of quiet, and also get dinner going while they were gone. I read for about 20 minutes, and then got going on a big ole dish of comfort food.
These two got back home, right as I was getting dinner in the oven. They watched a few videos, and then Emmie and I went outside to check out the beautiful front yard Daddy worked so hard on.
Emmie got another sweet card in the mail today, from her Great-Grandma on Nita’s side, and Emmie loved the cute little puppy on it.
And then this giant dish of buffalo chicken mac & cheese was finally ready to eat! The weather had been so gray and dreary today, and even a little cooler and windier than normal. So cheesy comfort food felt absolutely necessary, and this hit the spot. My cousin Sydney made this when we had lunch with her family in Jax, and I was craving it again already.
I also made a tiny dish for Emmie on the side without any of the buffalo sauce, and she loved it. She told me, “I like your noodles, Mommy,” and ate the entire dish! I wish I had thought to make her a bigger dish so she could have more than just one meal, but I only made her this one small bowl. I’ll definitely maker her a bigger dish next time.
This was only the second time I’ve even made homemade mac & cheese like this, but it turned out super good and super creamy. I actually added more cheese than the recipe said, so it was wayyy cheesy, but it was delicious. We had Caesar salad on the side, to try to pretend like any part of this meal was remotely “healthy.”
We actually sprinkled bleu cheese crumbles on ours, and she was curious about it. So I gave her a teeny tiny morsel to try, and she claimed she liked it. She said she wanted it on her noodles too, but I was still skeptical. I put just two tiny dabs on, and she gobbled it up and asked for more. I gave her quite a bit more, and she went to town! She kept asking for more and more, and eventually she ate her entire dish, noodles & bleu cheese & all!
But good grief that made a TON of mac & cheese. So two of these are for Jeff and I for lunch Monday, I’m taking one to a friend at work, and then one is for my parents who I’ll see tomorrow. It was so good, but it was enough for like eight people! (Oh, and yes Kathryn, I used your dish 😉 It was freshly washed and sitting out to return to you, and way more convenient to grab instead of digging out my own from under the stove, haha!)
Emmie was actually super sweet and easy at bedtime, and although we got her down a bit later than usual, she still went down without a problem. And hey, it’s Saturday night, so why not let her stay up a little bit later?
While we were at Walmart earlier this afternoon (we had to walk the entire length of the store to get from the one entrance they had open to the garden center on the other end), we grabbed a couple more candles. We got a larger size duplicate of the Mulled Cider one, and a new one called Fall Farmhouse. These big ole guys were only $4.96 each, and are definitely good enough to make your entire house smell amazing!
Jeff is exhausted from mowing the grass, I’m exhausted from chores, Walmart, and making homemade mac & cheese, so we’re both on the brink of falling asleep in the living room. We’ll watch a little something to unwind, and then head off to bed.
