All the Avocado

I got an early start on things today, by getting a giant pork butt in the crockpot, to making slow-cooker carnitas for dinner tonight.

Then we had a slow morning at home, which resulted in a slightly late drop-off, but it was still smooth and easy with no issues.

I loved my avocado toast from last night so much, that I had to repeat the exact same thing again for breakfast this morning. And it was still absolutely delicious again today!

We got a couple pictures of each of the girls today, and the parent portal app said they both had a good day.

My friend Heather brought me lunch today, leftovers of what she cooked last night – southwest chicken & rice soup – and even brought me an avocado and cilantro to go with it. And this was sooo good.

When we got home tonight, the house smelled delicious, with that pork slow-cooking all day. I got some rice and black beans and corn cooking, then pulled this out to get shredded up. It fell apart as easy as you’d imagine after cooking for almost 12 hours. And I made sure to strain out allll of those super soft onions as well.

After shredding the meat, I spread it out on a baking sheet, poured over a little bit of the cooking liquid and then broiled it for about 5 minutes, just to get those crispy bits. I zapped a can of fire-roasted corn, and made some homemade guacamole, and then we were all ready to eat!

The goal was kind of like copy-cat Chipotle bowls, and it turned out really good. Honestly, I think the meat needed just a little bit more flavor somehow, so although I did like this recipe, I think I’m going to look around for something slightly different to try for next time. And crazily enough, I ended up having avocado at every single meal today. Clearly, I’m glad that Mexican avocado ban never actually happened!

The girls splashed around in the bath for a while, had fun playing with each other, and I got them both cleaned up. After we got them out, I got Addie dressed first and came back to help Emmie, and after she towel-dried her hair, it was crazy all over the place. Addison immediately started laughing at her, and Emerson started shaking her hair and being silly, and Addison was giggling and squealing and just laughing so much! It lasted a good 3 minutes, and all four of us were just laughing so much at the whole thing. (No pics/videos, because Emmie wasn’t dressed…)

Unfortunately, after bath time, I realized Addison felt a little bit warm. We think she probably has an ear infection again, even though she just finished her last round of antibiotics five days ago… So we’re going straight to the pediatrician tomorrow after dropping off Emerson. We got her some Motrin, and then she easily fell asleep tucked into the “Daddy pocket” as we call it.

I got all the leftovers put away and the kitchen cleaned up, and then got started on Emerson’s bedtime routine with her. Her hair was so curly, and she was looking so pretty, and I just love this girl so stinking much!!

I got a few minutes of cuddles and loves from Addie-pie, and then I got her laid down in her bed. She can sometimes have a hard time sleeping with an ear infection, so we’re hoping and praying that she’s able to sleep through the night in her bed.

I have a TON of dishes to take care of tonight, so I’m heading off to do that, and then I’ll sit down and rest a little bit before bedtime.
