Both the girls’ schools were closed today in anticipation of the storm, so we had the whole day together. We started with eggs, of course. My friend Amanda brought in some fresh eggs from her chickens the other day, but since she doesn’t have an actual farm, she said they’re not “farm fresh eggs,” but they’re “yard fresh eggs” instead 🙂
So I used half the eggs to make scrambled egg sandwiches for our breakfast, and then I put the other half in my little egg cooker, to “boil” them (although it’s more like steaming them), to make egg salad for lunch later. And all of the eggs were so perfect and delicious.
I’ve used that little contraption dozens of times, but I’m still so impressed with how perfectly the eggs are cooked literally every single time.
We quickly got ourselves dressed, attempted a photo (which didn’t quite work out), and then made a quick trip to Publix, before the weather got too bad. I really only needed onions for our dinner recipe tonight, but we found a couple of extra BOGO snacks and goodies while we were there too.
Emerson always wants to “be scaled” to see how much she weighs, but her 35 pounds almost never changes.
I purposefully kept Addison awake longer than usual before lunch & nap, so that we could try to guarantee a nice long nap. (Spoiler alert – it worked.)
Emerson and I had our second kind of egg sandwiches of the day at lunch time, with our egg salad, and Addie had some leftover noodles from dinner the other night. (And you can see all of our BOGO snacks I hadn’t yet put away on the counter over there.)
We were of course spinning T-Swift’s “midnights” while eating and playing today.
After lunch, we got both girls down a for their naps – Addison slept from like 1pm – 4:30 or something, and Emmie slept from 1:30-3:30. I even fell asleep on the couch for over an hour myself. Then Jeff and Addie played together for a while, and Emmie and I did two puzzles together.
We let Emerson watch some shows on her Kindle, while Jeff and Addie kept playing, while I washed up some dishes, and then got started on dinner. I made this recipe a few times a couple of years ago, but then forgot about it. But I randomly remembered it last week, and put it on the menu for tomorrow. It takes a little while to get it all together, so it’s too much for a school night. But since we ended up staying home today, it was perfect.
Bake a jar of red pasta sauce (seasoned up some more) with a block of cream cheese for about 10-15 minutes, while you brown the meat with a diced onion, and boil the tortellini. Then the cream cheese will be hot & soft, and you can smush it down and mix it up. Pour in the meat & pasta, and some parmesan, and mix it all right in the dish. (Even at this step, it’s super yummy and I ate a few bites, just to test it out 😉 ) Then top with mozzarella & some more parm, and bake for 15 minutes. It’s so rich and creamy and cheesy and delicious, and my family tore it up!
We had lots of playtime after dinner before bedtime, so the girls and I hung out in Addie’s room, while Jeff did some computer work of some sort.

And then Emerson made me chip-clip this blanket like a cape, and decided she was a queen.
We did a second quick clean-up of the living room (we had already done it once today), and I vacuumed and changed Addie’s crib sheet, and Emmie gathered up a pile of dirty clothes to wash. Then we all sat and cuddled and watched a couple short episodes of “Bluey,” before we started on the girls’ bedtime.
We had a great day together, and we still have 3 more days of weekend-ing to go!
