We made sure to get out the door “on time” today, maybe even a couple of minutes early, for Jeff to drop off me and Emmie at her dentist appointment by 7:45am. Then he ran Addie over to NFC for her drop-off, where she was acting like such a little goofball for her picture time.


Emmie was watching “The Floor is Lava” on the ceiling while getting her teeth cleaned today. They are always so fast here, I barely have time to pull out my book, so I just read on the Kindle app on my phone. They said her teeth look great, and they were impressed that she brushes completely on her own. Plus, no cavities!

Jeff came back to pick us up right as we were finishing, then we dropped Emmie at school, and he dropped me at work.

For dinner this week, my whole meal plan was created to make dinners that didn’t require the stove top, since mine cracked last week and we haven’t replaced it yet. So last night we had tuna salad, and tonight I made low-carb white chicken chili, just by using the saute function on my instant pot, but not actually pressure cooking it. I used canned chicken for ease and speed, and not having to “cook” anything, other than sauteing the diced onions. I had my tiniest little sous chef helping me out tonight too, and she was so sweet and did a great job. I tried to give her freedom to do things mostly on her own, while still supervising. Also, please notice the amount of garlic powder this girl poured in there! She’s a girl after my own heart though, and it really wasn’t too much in the end…


I ended up topping mine with a big handful of these garlic pepper crispy onions, and that really gave the best texture and flavor. Jeff and I keep making jokes about how most of the low-carb meals I make are good, but just need a little something extra….like… carbs! Like, normally I would have wanted some crackers or tortilla chips to eat with this, but that would have added a bunch of extra carbs.
There’s an episode of Parks & Rec (one of our favorite shows), where this super healthy man drinks the full-fat eggnog instead of the fat-free eggnog, and he says, “I don’t know if you know this or not, but things with fat in them taste way better than things with no fat in them.” So we keep saying, “Things with carbs in them taste way better…” But honestly, this was still really good, just woulda been better with carbs 😉



I didn’t really think Addie liked the soup very much, but she said she did and that she wanted it packed in her lunchbox for school, so that she will get! Plus a giant container for me that I’ll probably eat for two days at the office.

We had some time to just kind of hang out and play a little bit between dinner and bedtime…



We made sure to get the girls down at a good time for bed tonight, because Emerson especially was exhausted. She actually had a field trip to Skate World today (didn’t get any pics from her teacher yet, but I’m hoping she’ll send some tomorrow), and she was totally worn out. This was actually her first time ever skating, and I was terrified my clumsy, accident-prone girl would get hurt. But she was fine and said she loved it and had a great time! But she was super tired tonight, and bedtime for both girlies luckily went quickly and easily.
Jeff ran out to Walmart to get one of those tri-fold science-fair-type poster board things she needs for school tomorrow, since I ordered one in our grocery order over the weekend, but it was a teeny-tiny like 1-foot size, instead of the standard size. So I’m going to paint my nails and watch Netflix, and he should be back home soon…
