Happy little rainbow girl on a Friday, at the end of a rainy week! (This was the outfit she was supposed to wear on Monday, that she peed through while sitting ON my kitchen counter. Obviously, we washed it, haha.) But it’s adorable, so I’m glad she got to wear it today!
Finally enjoyed my last piece of zucchini bread for today’s breakfast, toasted & slathered in butter. And it was still soooo good. That was my first time making it, but it turned out perfect, and I think I’ll need to make it again for sure.
During my morning break at the “office,” I commuted all the way from the dining room to the kitchen, to throw together some stuff for crock-pot beef Strogonoff for dinner.
During my lunch break, I read my Kindle book, which is my favorite thing on my at-home lunch breaks these days – sitting in this chair, looking at my cute home decor & plants, and reading a good novel!
Emerson had a good day at school, and coincidentally they made rainbows for art time out of fruit-shapes, while she was wearing her rainbow outfit. It was perfect!
This was the first time (I think) I’ve made crock-pot beef Strogonoff like this, but it was really delicious! Highly recommend! (Just throw in all stuff in photo above, on low for 8 hours, add 8oz. sour cream at the last 30 minutes. Super easy, super yummy!) Oh, except I’m definitely adding sliced mushrooms next time. I don’t know what I was thinking to forget them today.
Emmie wasn’t feeling the Strogonoff though, so she just had butter noodles, and ate those up like gang-busters.
Jeff wanted to get out of the house though, and his most-requested, go-to treat is always DQ, so we just went on over there for some ice cream!
When we got home, we ran around in the front yard for a little while, so that she could run off some of that sugar, and she was super cute and funny and just being so crazy and silly!
She was still a little crazy at bedtime, so it took a little tough love to get her to chill out, but we accomplished it, and got her down for bedtime, and she’s been quiet since then!
We have just a few projects planned for this weekend (along with our regular chores), so that we can enjoy our three days but also get a little bit accomplished. Looking forward to a 3-day weekend with my family!
