National Taco Day

Only one cute little Pullen girl for morning pics today. Emmie was very adorable in her Squishmallow shirt, with the mushroom that matched the mushroom art behind her.

Beautiful sunrise as soon as we stepped out the door today, from all angles around the house!




I dropped off this little sweetie pie at school this morning, and she turned around and gave me this cute little Taylor Swift heart-hands before running off to the cafeteria for breakfast. 🫶🏻


And my poor little Addie Pie was sick again. She started getting sick at school yesterday, but made it through the day until I picked her up at the normal time. But then by the time we made it home, she threw up her entire lunch. And then she kept going every few hours through 6am this morning. So Jeff stayed home to take care of her today.


She basically slept all morning, and then Jeff took her into see our pediatrician early this afternoon. She was a very pitiful baby girl, but it’s just one of those stomach viruses that goes around all the time. They did prescribe her some meds for the nausea though, and she was finally able to eat some toast late this afternoon, and some random stuff for dinner. Praying she keeps it all down tonight.

My friend Heather brought me piece of homemade cheesecake today. I found it laying on my keyboard when I got to my desk, so I stashed it in my fridge for my afternoon snack. I also happened to have this little tiny jar of apple & date jam, and that was delicious as a topping.


AND another work friend Jeanne gave me a dozen fresh eggs from her little backyard chickens. We’re gonna have some good egg sandwiches for breakfast on Saturday morning with these!


I picked up my Emmie girl after school, and I loved seeing her pull out her school library book from her backpack, and proceed to finish the whole thing before we got home.


As soon as we got home, I got busy making some quick homemade pickled red onions, to go with the tacos for National Taco Day. I had already planned to have tacos this week, with store bought carnitas from Aldi, but I just rearranged the menu when I saw a post this morning saying today was National Taco Day.


This was my first time buying this from Aldi, and it was sooo good. I love ordering carnitas from Mexican restaurants, but this honestly stacks up to most places. And the citrus was actually quite prominent, which I loved. Will definitely be buying this again, it was perfect for taco night, and would be really good in quesadillas or burritos or rice bowls too.


I just wish I would have had some fresh cilantro to top it all off, but this little concoction turned out SO yummy – refried beans, carnitas, cheese, sour cream, tomatoes, taco sauce, pickled red onions. Already excited to eat the leftovers for lunch again tomorrow. (Emmie had some leftovers, and Addie had little bits of tortilla and cheese and strawberries, trying not to give her anything to upset her stomach again.)

We all just relaxed and watched a movie snuggled up together after dinner, until it was time to settle down and start on the girls’ bedtime routines. Little Sister very quickly fell asleep with Pennie’s head laying in her nap.


And Big Sister and I re-read her school library book together, so that she can take her AR test on it tomorrow. She’s actually already met her AR (accelerated reader) point goal for this first nine weeks (by earning 10 points – she’s actually gotten 14 already), but if she still takes more tests she can pull up her average from an 82%, to hopefully 100% in the next two weeks.


All of the leftovers are put away, and the kitchen counter was wiped down, and the ceramic stove-top has been scrubbed (where I accidentally boiled over the vinegar mixture for the pickled onions and made a huge mess and a weird smell in the house for a while…), so now it’s time to rest. Addie kept us up most of the night last night, so I’m really really hoping and praying all of us sleep better tonight, because I have been exhausted all day!
