I couldn’t hardly get a “regular” picture of this goofball this morning, because she just kept making funny faces. But she looked so pretty in a new dress from Nana and her cute, gold, hand-me-down sandals.
In the car this morning, she told me, “When we go to dinner at the North Pole, we’re going to bring my penguin there.” I said, “Oh really? And when are we going to the North Pole?” And she said, “At Christmas-time.” So, apparently we’ve got some holiday travels planned already! Haha 🙂
She had a good day at school today, even if she didn’t actually nap at all, which is not so great…
After eating and relaxing for a bit at lunch time, I got busy in the kitchen doing some prep-work for dinner. I made a marinade for Greek chicken, diced the chicken & put it in the fridge. I also made a Greek salad dressing, and homemade tzatziki sauce, and I also made a huge mess.
I picked up my Tater Tot at the end of the work day, and we did some cuddles on the couch (watching songs from “The Greatest Showman” on YouTube) before I got started on dinner. I cooked up the marinated chicken, and used it to make Greek chicken gyros with my homemade tzatziki sauce, with Greek side salads, and cous-cous. Everything was so yummy! Like honestly y’all, I was really proud of and impressed with myself tonight 😉
There’s LOTS of veggies and prep work, but it’s still easy and totally worth it.
And this chicken. THIS. chicken. Man y’all, it was gooood.
I toasted the pitas, but I still couldn’t get them to open correctly, so I just laid them out “open-faced” and then we folded them in half like tacos. And I seriously can’t get over how good it was. I’m already excited about eating the leftovers for lunch tomorrow!
Miss Priss had a whole plate of white carbs (noodles, butter, croutons, pita), but try not to judge too harshly. Toddlers are tricky, and sometimes, fighting over meat & veggies just isn’t worth it, haha 🙂 She was trying to sing “skinny marink-a-dinka-dink” but was tripping all over it and getting all mixed up, and it was incredibly cute. She was wagging those little fingers all over the place, just being adorable!
We had some play time after dinner (while we put “Rio” on in the background), and girlfriend was wound up like crazy. She was pretending to give me “strawberry powder” for dessert, and although have no idea what that is, she was so funny about it!
I loved the little pigtails Miss Jessica did in her hair, but it look so messy and funny when we started taking it down. She could only sit still long enough for me to do one side and then she started running around again, with just one side flopping about.
She also loves sharing my super cold ice water from my walmart cup, of which I had to buy a second one, because I love it so much, and it is less than $10.
After taking the other side of her hair down and getting her jammies on, Daddy told her her floppy hair looked like floppy doggy ears, so she put her little hands up on her head like floppy doggy ears. Her face is just so sweet and cute and precious!
We were “supposed” to read the story of Noah in her little Bible book tonight (it was the next one in line), but she insisted on reading Goliath, and even though it hurt me to skip around, how can I deny the girl the specific Bible story she requested? I couldn’t, so we read Goliath. And it reminded me of her actually. A tiny little fighter takes on a giant obstacle, and overcomes it through God. This tiny girl is taking on a big-time surgery, and since God is on our side, we’re definitely going to overcome this!
It seems like I say it a lot, but I’m feeling pretty tired tonight (work was actually super crazy bananas today), so I’m gonna take it easy the rest of the night and just relax for a bit before bedtime.
