Another Monday morning, the start of another fresh week, with my two beautiful, super sweet girls!
Addison Laurel just REALLY loves walking so much these days!
Aunt Meggie was leaving as we were pulling in, so we got some loves from her first, and then went on a tour of the school to visit the triplets. Ellie got to see Addie, before dropping Addie off, but didn’t get pics there. Then Emmie and I went to see Kensley and Riley, and Emmie kept picking them up. They couldn’t get enough loves from her though, and they kept rotating and going back to her for more and more loves. It was very sweet.
My friend Heather made this amazing turtle cheesecake over the weekend, and surprised me with a piece this morning, and it was so freaking delicious. I also really liked the Christmas gingerbread bowl she brought it to me in.
Meg texted me a little bit lunch time asking if I wanted to meet up, and of course I took her up on that! She walked over to my building and we each had our own little picnic lunch together, and it was super nice. We hadn’t done this in quite a while, and we both missed it.
After getting the girls picked up from school (we got stuck in some traffic behind a wreck on Thomasville Road and so we got home late), but Addie walked around the house with Daddy while I cooked dinner, and Emmie grabbed a snack and ran off to her room like a teenager…
Most of y’all have probably seen this recipe through the years, but after seeing my mom make it recently, I decided it was time to finally make the egg-roll-in-a-bowl recipe myself. And y’all, this really was so stinking good!! And it was very fast and very easy, and pretty cheap too (which is very important since groceries are getting so stinking expensive these days!), and this will definitely be added to our regular rotation now.
I served it over jasmine rice, with a few sesame seeds on top, and some (frozen) air-fried pork egg rolls as well. And although we didn’t eat this “in a bowl” it was still perfect on a paper plate 😉
Emerson didn’t actually like the meat/veggie mixture, and just ate the plain rice, but Addison actually loved it, and ate not only her own little bowlful, but some of Daddy’s too! And she kept digging into her little “feed bag” as we call it, getting all the last bits that had fallen in there. (If anyone wants the recipe, and my own few adaptations, let me know, because I’ve already got it typed out and ready to send, after sending it to my friend Britteny already.)
I was very glad there were lots of leftovers, to make some to-go bowls for work lunches. We had run out of the good jasmine rice, but I made up a couple servings instant white rice, and that’ll be almost just as good.
Addie wanted to do some more walking around the house after dinner, and Emmie ate some ice cream while watching a show on her Kindle.
Bedtime went pretty decent tonight, and both girls are sleeping soundly by now. I’m heading off to wash up all the bottles and dishes, and I’ll finish up an episode of Survivor while I work on that…
