We switched things up, and Jeff took this little silly goose to school this morning.
And Emmie and I stayed home, because she doesn’t have camp or school this week. So I took the day off to hang out with her, and we had the best, easiest day! Started out Pennie cuddles on the couch…
Then I made us some simple egg & cheese wake-up wraps for breakfast, with extra toppings & iced coffee for me.
We had to go pick up a giant bag of dog food for Pennie real quick (we ran out without realizing it), brought it home to feed her brunch, and then went out and about for a few hours. We hit up Goodwill first, but didn’t find anything.
Then I needed another coffee, and was pleasantly surprised when they told me I had a free coffee reward on my account! So I had them upgrade it from medium to large, and enjoyed my free coffee!
We went to TJ Maxx to wander around, where she saw more of these fruit stools she loves. From there, we also went to Hobby Lobby next, before meeting up with Grammy.
Emerson had specifically requested sushi for lunch, so we went to Kiku for their lunch sushi special. She gets a very simple roll with just crab & cream cheese, but that girl shovels the whole thing down, with her little bare hands, and absolutely loves it! We loved hanging out with Grammy, and hearing some of her funny, dramatic work stories today. Thankful for a fun lunch date with her!
We went back into Hobby Lobby with Grammy after lunch for her to grab a few things, and then sent her back to her office. Next up, Emmie and I went to Home Goods, and found this candle that looked like avocado toast with a fried egg on top. Very cute, didn’t smell great, and obviously I would never want to actually burn it. (We didn’t buy that.)
We were ready for a little rest finally after four or five stores and lunch, so we went back home to hang out and chill. We cuddled up on the couch and Pennie joined us, and we just watched a little tv, until I accidentally drifted off and had a short little cat nap.
Even though we went to all those stores, these are the only few things we bought, so really, we did good not to spend very much – all this for only $20!
We picked up Addison from school a little earlier than usual, and made it back home right at 5pm, and I immediately got started on dinner. While I was peeling and chopping carrots, my little bunny wanted her own carrot to munch on.
So I was a very busy bee in the kitchen tonight, chopping, roasting, mixing, mincing, rinsing, dicing, seasoning, etc… This was a bit more involved than what I would usually make on a weeknight, so it was good I decided to do this on a day I was off work. It took me about an hour and a half (I typically only have about 30-40 minutes to cook on a weeknight), but I made delicious Greek chicken & rice (with fancy Greek lemon rice pilaf) bowls with baked chicken & veggies, & homemade tzatziki sauce. Bo made this for their family a couple weeks ago (based on how much we all love Cava), and it inspired me to make it too, and it turned it delicious!
Obviously the girls’ bowls were much more simple than ours, but mine was the most extra of all… Greek rice, roasted veggies, Greek chicken, tomatoes, homemade pickled red onions, roasted garlic, chickpeas, feta cheese, homemade tzatziki, & a squeeze of fresh lemon. It actually was not easy peasy lemon squeezy, but at least the lemon rice & fresh lemon were on theme with my new kitchen towels 😉
Little Miss would barely even try a bite, until Mommy did the airplane and the choo choo train, and then she ate almost her entire bowl finally!
I made myself a bowl of leftovers for lunch tomorrow, and got the kitchen counter all cleaned up and everything else put away, and then finally sat down to rest for a little bit while we watched Bluey.
Addie put on these cute new pink Bluey jammies from Nana and got herself a book picked out for bedtime. We read her story, and then moved to Emmie’s room for her routine.
They’re the sweetest little sisters together – I just love these little faces!!
Emmie and I had such a great day together today, dinner was high effort (but worth it), but the rest of the day was truly easy peasy lemony squeezy! Thankful for our special one-on-one time together, while she still loves hanging out with her Mama!
