Down the Bayou

Jeff and the girls were running  a little bit late for school drop-off this morning, so they flip-flopped and took Emmie first, so they didn’t get sister pics this morning. We were able to do it tonight when I picked them up though, and they were still just as cute!

Actually, Emerson is wearing one of the new dresses we got at Belk the other day, and I’m obsessed with the 90’s vibes of it. Especially with her little Converse too. And Addison is wearing a hand-me-down dress from the triplets, that I had actually gotten for them as a gift when they were her age!  

The house smelled so yummy when we got home, because I had food cooking in the crockpot waiting for us. This was a new recipe I was trying out, thanks to ChatGPT actually! So here’s the story – we saw a YouTube vlog the other night about renting a house-boat and named “Swamp Tuna,” going up and down the Louisiana bayou. And I loved that name and immediately decided I wanted to come up with a recipe for a Cajun-style tuna salad and name it Swap Tuna. So I came up with a few things, fed it into ChatGPT with some promts, and “together,” we came up with something that sounds delicious. (I’m planning to make that on Thursday night.)

So then a couple of days later when I was making our meal plan and grocery list for this week, I asked ChatGPT for a low-carb crockpot recipe using frozen chicken breasts, it immediately came up with “Swamp Chicken.” And I already had everything on hand that I needed, so that just worked out perfectly! In order to keep it low-carb, I should have eaten it over cauliflower rice, but I just made our regular jasmine rice, and had a tiny portion for mine. I made some steam-in-the-bag microwave green beans to go with it, and seasoned those with butter, garlic & parmesan. I added extra cajun seasoning to my whole plate, since I went easy on it so it wouldn’t be too spicy for the girls. And it all turned out delicious! Jeff and Emmie both got seconds actually! Oh, and we obviously had to watch “The Princess and the Frog” while we ate to go with the Cajun-style vibes.


And you can tell the ways my girls are different by looking at their plates. Emerson ate all of her chicken and rice, and Addison ate all of her green beans. Then Emmie wanted seconds of chicken and rice, and Addie took all of her sister’s green beans off her plate and ate those too. And then I finally got Addie to eat some of her chicken and rice too, by bribing her with ice cream if she finished dinner 😉



The girls actually had their bath before dinner tonight while I was getting everything ready. Then Emmie worked on some homework after we finished eating (and yes, everyone had ice cream), before we got started on the bedtime routine.

I need to go wash dishes (and listen to my audio book), and also stuff some Easter eggs to send to NFC for Addie’s egg hunt. Jeff needs to work on some laundry (both folding, and washing a new load), and then maybe we can settle down to rest…
