Double Taco Tuesday

Jeff was up and out of the house super early this morning, to meet up with some guys from church at an early-morning coffee shop get-together. And with Emmie still at my parents’ house, it was just me and Addie at home getting ready together today. I made a pot of coffee, put dinner in the crockpot, got both of us dressed, and out the door on time! And then we got to see Aunt Meggie and Baby Hayden at school!

And when Jeff finished up with the guys, he ordered me breakfast and coffee from the shop they were at (Ground Ops Roastery), and I just drove through the parking lot to pick it up from him.

And then I asked Jeff to take me out to Comeback Tacos for lunch again today, because they were so good last week and I couldn’t stop thinking about them. Unfortunately, they weren’t only $1 anymore, because the guy said people were taking advantage and ordering like 60-70 tacos online (paying online), and so they discontinued the special summer deal. But we still ordered the street tacos, and they were super stinking delicious.


So for dinner, I had put salsa chicken in the crockpot this morning (literally just chicken & salsa) plus sliced bell peppers & onion obviously, and then I stirred in some sour cream when I shredded it tonight. Made rice, corn & black beans, and then we had delicious chicken taco bowls. So I had double taco Tuesday today, which is really just my dream. Next up, I’ll have to add breakfast tacos to the meal plan, and really go all out with a triple taco Tuesday. Now that would really be my dream taco day!


Emerson totally cleaned her bowl out, and Addison got close but didn’t quite totally clean it out. But both girls loved it and kept saying how good it was. And luckily, we had so much leftover that I was able to save some to freeze, so we can eat it again in a couple of weeks, without any muss or fuss.

Then we had to go outside and watch Daddy as he was working on still trying to get the riding lawn mower working. He’s getting really close, but still not quite ready. But the girls enjoyed running around and playing for a few quick minutes.



I have the day off tomorrow, to get Emmie packed for camp, and then dropped off at church later, so her and I have plenty of chores and a few errands to run together.
