Cooking Two Dinners

Look at these little cuties, all happy and smiley on a Monday morning. One of which who’s eating a BBQ baked chip on the way to the car.

And I don’t know what this goofiness is all about, but she’s still cute.

My friend Amanda at work gave me this gigantic head of cabbage from her backyard garden, as well as this little cluster of new potatoes. So I just added a kielbasa sausage & some onions, cooked it all in my large Dutch oven, and we had a whole, delicious meal. I actually only used half of the giant cabbage, and I’ll figure out something to do with the other half soon.

The girls didn’t like the cabbage, but they did both like and eat the sausage and potatoes, so they still had a good meal. After dinner, I actually got busy making a second dinner, for tomorrow. I had wanted to make this giant egg casserole over the weekend (using the fresh eggs from my friend Heather’s backyard chickens), but we got busy and I never got around to it, but I knew it would take too long for dinner on a weeknight. So I went ahead and fried up the sausage, and then made the casserole tonight, to stick in the fridge for tomorrow night.

Once I got it into the oven, I washed up a good load of dishes, and then got started on the girls’ bedtime routines. The timer was about to go off right as we went back to Emmie’s room, so that worked out perfectly. The house smells super yummy now, and I even had a little tiny taste test of the corner bite of the casserole, to make sure it turned out good, and it was gooood. Time to curl up for some tv time, and repaint my nails again.
